For convenience and safety reasons, the hob is positioned at a level of 80 cm from the ground. If you do it higher - you can get burned, lower - you have to bend over. The cauldron sinks into the firebox by 2/3 of its size. In order for the brazier to perform more functions, metal rings of different diameters are provided in the hole for the cauldron - for different dishes. Completely closed, use like a regular hob.

Laying the foundation
The work is carried out in stages:

It serves to remove smoke and draft. For an iron chimney, you will need a thick pipe and connecting rings. To make it multi-stage, the grinder cuts the pipe into pieces. Foundation
It is necessary to prepare a monolithic foundation for a brick barbecue, using boards, a building level and marking cords for formwork. The base must correspond to the dimensions of the oven + protrude no more than 100 mm on each side, and 250 mm on the front side.
A mini-pit approximately 400 mm deep is dug under the barbecue, into which 100 mm of sand are poured, then the same amount of rubble.
On top of the resulting structure, it is necessary to lay metal reinforcement with a section of 12-16 mm in height by 200 mm, welded with squares, as in the photo below.
Then, around the resulting pillow, it is necessary to build a formwork from boards, about 300 mm high, so that it protrudes 100 mm above ground level. Now fill the entire structure with concrete mortar.
To prevent the concrete from cracking, a plasticizer is added to it. The solution is additionally rammed with a wooden block. During hardening, the concrete must be poured with water and covered with a film.
Three weeks after the concrete has dried, you can start building a barbecue. In principle, it is better to start with dry laying and numbering the bricks, especially if DIY brick barbecue is your first experience. It is necessary to stretch the marking cords so that you understand where the future barbecue walls will be located.
Masonry mortar
Any building mixture contains fastening components, such as cement, lime, clay. Of course, many choose solutions with one tightening element and one filler (for example, sand), as well as with two components (for example, cement can be added to a lime-sand mortar).
Lean mortar - a mixture prepared with excess filler, it cannot be durable and therefore practical.
A greasy mixture is a solution containing an excess of an astringent component, such a solution is very elastic and dries for a long time, and the masonry seams do not look very beautiful because of it.
Checking fat is easy. If the resulting mixture is normal, then it does not completely fall off the trowel, 1/3 or 1/4 of the volume should remain on the trowel. And the inscription with a finger or a trowel pen should only slightly fade, but not disappear.
Barbecue masonry mix is usually a mixture of cement and sand mixed with water. Cement acts as a bonding material. A fairly well-known type of cement is Portland cement, it can be found in almost any building supermarket.
To prepare the mortar, we need to use river sand, it gives a very good bond and a thorough hardening of the masonry.
Do not allow the mixture to harden, for a slower process of bonding the solution, add slaked lime or a plasticizer, it can be either liquid or powder. The second option is by far the most common.
Pour some dish detergent into the solution. This will strengthen its hold.
The amount of water to be added is directly related to the moisture content of the sand. As a rule, about one bucket of water is taken for one ten-liter bucket of cement.
Do not forget to add water in small parts, it is also necessary to constantly mix the resulting solution. The finished mixture should be used within two hours.
If you have a small amount of work, ie. you are laying small barbecue, then it is better to use the finished mixture. During the construction of large masonry, it is better to prepare the mixture yourself in a ratio of 1: 3 (1 bucket of cement, 3 buckets of sand);

Laying rows of bricks
Brickwork is made mainly of horizontal joints. They are filled with a special mixture that connects individual bricks into a single whole.
In the process of laying a barbecue, excess mortar that has come out of the seams is removed by moving the trowel up (if you do this by moving the trowel horizontally, the bricks will be dirty). After that, the so-called jointing of the seams is performed. Thanks to this operation, the wall acquires an attractive appearance, and, in addition, correctly embroidered seams are less susceptible to weather factors.

Exploitation

- A sufficient amount of air must enter the firebox, otherwise the fuel will not burn completely. This will form too much soot on the walls;

Calculation of the number of bricks
The calculation of the material is done after choosing a model with an ordering scheme. The approximate number of bricks in each row is considered, their type (refractory, silicate, ordinary) and shape are taken into account. Approximate calculations are made as follows: bricks are counted in the first, continuous row; the resulting number is multiplied by the number of rows and the so-called fill factor. For barbecue ovens, it is 0.65. We take into account that approximately 15% of the bricks will go into marriage, this number must be increased to 30% if it is planned to cut bricks. They do break down.

Foundation preparation
Before proceeding with the brickwork, it is necessary to prepare the foundation for the future furnace.
- For the foundation, mark the desired area with pegs and thread with a margin of 1 meter on each side. Before the oven, the stock can be made much more.

- Dig a pit with a depth of 30–50 cm. Considering the size and weight of the furnace, you need to do not strip foundation, but a stove.
- At the bottom of the pit, pour a layer of crushed stone or gravel about 10 cm high; compact the layer tightly.
- Reinforce the foundation with a lattice of metal rods to make it more reliable.
- Prepare a solution: 1 part of cement to 2 parts of sand, mix well, pour at once so that there are no cracks. Let the plate dry well.

For waterproofing, the frozen slab must be covered with roofing material in two layers.

Sometimes, instead of concrete, brick is used for the foundation. A concrete foundation is more durable and cheaper, but a brick foundation is easier to fold and dismantle if necessary.

Unlike an ordinary Russian oven, which is up to two meters high, a cauldron oven does not have a high vault. Approximate calculations are made as follows: bricks are counted in the first, continuous row; the resulting number is multiplied by the number of rows and the so-called fill factor. For barbecue ovens, it is 0.65. We take into account that approximately 15% of the bricks will go into marriage, this number must be increased to 30% if it is planned to cut bricks. Foundation preparation
Before proceeding with the brickwork, it is necessary to prepare the foundation for the future furnace.
- Dig a pit 30–50 cm deep. Considering the size and weight of the furnace, it is necessary to make not a strip foundation, but a slab.
- At the bottom of the pit, pour a layer of crushed stone or gravel about 10 cm high; compact the layer tightly.
- Reinforce the foundation with a lattice of metal rods to make it more reliable.

Sometimes, instead of concrete, brick is used for the foundation. A concrete foundation is more durable and cheaper, but a brick foundation is easier to fold and dismantle if necessary.

The resulting number is the diameter of the oven. To calculate the sheet metal length, this number is multiplied by 3.14. 3 mm is added to the value obtained.
Creating a Brazier
It is created strictly according to the project. The stages of work are:
- The bottom and 3-4 walls are made on the side. Used sheet metal. 3 walls are made if it is necessary to weld the boiler.
- In the sidewalls, directed along, openings for skewers are made in the upper side. Each has a length of 5 cm. The width is identical to the width of the skewer itself.
- The edges are bent in the walls on the side. The bottom is placed on them. The bottom can be made removable.
- Holes with a diameter of 1–1.5 cm are made in the bottom. The distance between them is 2–3 cm. Rows with holes are also distant from each other. If a stove is attached to the barbecue, then a semicircle is cut on this side of the bottom.
- The side walls are welded.
Creating datums
Usually they are characterized by solid strength and stability. The corners are the most commonly used. Parameters: at least 3 x 3 cm.
If you plan to install another smokehouse, forged legs are placed.
Crossbars must be welded to the top of the legs. They will make a rectangle. In terms of width and length, it is identical to the main part of the entire structure. The width of the crossbars themselves is 3-4 cm.
Identical parts are mounted to the legs at a distance of 10-20 cm from the ground. There will be a shelf for firewood.
The brazier is attached to the supports using the following methods:
- Just sticks to them.
- Latches are used.
- To the outer crossbars, or rather their corners and centers, elements of forged rods are welded. Their length is 4 cm. The position is vertical.
Methods 2 and 3 allow you to disassemble the device into two parts. This makes it easier to move around.

Dishes of Turkic-Iranian cuisine are not cooked with smoke. But this does not mean that an ordinary oven with a cauldron is suitable for them, a simple pilaf will not turn out the same. But the main confusion around "Samarkand" is that a lot of fakes are offered on the Internet, and often directly from the manufacturer. The initial screening of dubious offers can be done on the basis of releases and announcements of resellers. Of course, they have heard about V-1, 2, they are familiar with the legends about V-3, but, being, to put it mildly, not very literate, they do not know that “fau” is the letter of the German alphabet V, and the name itself "wonder weapon" comes from Vergeltung (Vergeltung, retribution). The next, and final, stage of verification of the proposal is already the usual one: we require a certificate for the furnace. It must clearly state its purpose. In any case, even the original "Samarkand" at a price of less than 15 thousand rubles. - ordinary. "Bay" pilaf will not work in it.
Brick brazier with a stove under the cauldron with your own hands. Step-by-step instruction
Consider the example of building a furnace, the length of which is 6 ceramic bricks. To make a foundation, you need to dig a hole 30 cm deep, and the width should be 10 cm more than the length of the future building.
Fix the formwork from the edged board around the perimeter. After backfilling the pit with sand and gravel, everything must be carefully compacted, while pouring water.
At the next stage, the base must be poured with a solution prepared from two bags of cement.
After about a couple of weeks, the mixture will dry and it will be possible to lay a layer of waterproofing. For this fit ruberoid. The next layer will be one row of masonry, which is also filled with mortar.
The first two rows must be laid out in a solid rectangle to avoid overheating of the roofing material. All corners must be leveled with a building level. Excess solution should be removed immediately.

The most popular and very good home-made stove for a cauldron is a sheet of any steel (shell) rolled into a wide pipe on a fireproof stand or simply on the ground; see fig. The proportions of the workpiece are approximately 3:4 (height / length). The proportions of the furnace opening are the same, and its area is 1/8-1/10 of the workpiece area. A fire door is not required. You can cook in such an oven with smoke, and “asia” of good quality, and just boil and stew.
At first glance, it is not difficult to calculate the length of the workpiece: we take the diameter of the pot along the outer edge of the rim, subtract 2.5-4 mm from it, for 3-12 liters of the pot, respectively, and multiply by π = 3.14. We also give an allowance for the welding seam (approx. 3 mm) and cut out the workpiece. We put the bowler hat, and it ... either fails or immediately gets stuck. Although, so that it does not jam from expansion when heated, a cold pot in a cold stove should “fidget” by 1.5-2 mm in all directions.
The fact is that thin metal conducts strongly when welding. In production, the exact dimensions of the workpiece and the welding mode are selected according to prototypes, and the selection has to be done every time you change the grade or even the batch of the sheet. And then accurately maintain the welding mode, which is impossible with its manual method.
In fact, the length of the blank for a metal stove must be considered based on the INNER largest diameter of the pot. And then in the corners of the petals that form the corolla of the oven, we make small, 1.5-2 cm, longitudinal slots, and the petals are slightly bent outward, and their edges upward until the bowler sits freely on the rim. It is impossible to make the shell wider and bend the petals inward, from thermal expansion they will tightly dig into the bowler hat and you will not pull it out.

Depending on the mobility of the brazier, several varieties are distinguished.
- Stationary These are massive structures that cannot be moved. As a rule, they are laid out of brick, have several surfaces for cooking, can be equipped with a visor, a roof.
- Portable These are mobile devices that are easy to transport. They can be folding, prefabricated, and also mobile (have wheels).
If there is a grill above the brazier, then such a device is called a barbecue.
If we are talking about metal braziers, then they can be thick-walled and thin-walled. The first are distinguished by a long service life, they are usually stationary. The second is the prerogative mobile devices, since thinner walls provide less weight for the brazier. It is logical that a small mass of a mobile barbecue is one of its most important criteria.
Stationary "stoves" can be angular and universal. Thanks to its compactness, the corner unit saves space in the garden. A universal brazier is an option, the installation of which is not tied to a specific place on the site, and also includes several cooking surfaces.
As for the material of manufacture, depending on its type, there are several types of barbecue grills.
- Brick. It is characterized by the ability to flare up to high temperatures and give off heat for a long time. This allows you to cook several dishes at once or cook dishes for a large company in several batches, without fear that the grill has cooled down. Such devices, unlike analogues made of metal, do not corrode, tolerate negative impact external environment, the service life of a properly folded brazier is a century. It is the brick structure that allows you to organize a combined barbecue, including several cooking surfaces, a countertop and even a sink. Finally, such devices look solid and respectable. They will definitely decorate the site. The "cons" of brick braziers are a rather long period of their construction (at least 14 days are required to prepare the foundation), labor intensity and the high cost of the construction process.

- Combined. Combines both brick and metal elements. As a rule, a metal box is made of metal. This option has an iron base under the cauldron.

- with a barbecue grill (ideal for cooking fried meat, fish);
- with a smokehouse (a smokehouse can be used not only for cured and smoked meat, but also for cooking barbecue);
- with a cauldron in which it is convenient to boil water, cook soups, boil potatoes and pilaf.

When the foundation has hardened, we proceed to the ordering of the bricks. First, with levels in hand, we make dry masonry. If everything is correct, we start ordering with a refractory solution.
It must be produced strictly in accordance with the drawings of the project that you have chosen.
Despite the chosen project, there is a set of unshakable ordering rules:
- The thickness of the seam between the bricks is 12 mm.
- For the evenness and strength of the structure, dressing is needed, that is, the corner brick of the upper row must overlap the seam of the lower one.
- Use levels when laying each row of bricks.
- Remove excess mortar with a trowel. In order for the brick to lay flat, we knock it out with a rubber mallet.
In accordance with the project, on the first row we leave a hole of the required size for the ash pan, above (again, in accordance with the project, usually it is 3-4 rows) - for firewood, we also take into account the chimney.
Ordering also provides for overlapping the furnace. On the 12th row, do not forget about the hole for the chimney. At the level of the bottom of the boiler, according to the project, the chimney is narrowed. The 13th row of the order, as a rule, provides a frame for the corners for installing the plate.
When the main part of the structure is ready, lay out the pipe. The height of the pipe will also depend on the project. Of course, it is better to foresee that the smoke does not come out at the level of the people sitting next to the table.
