To cook rustic potatoes in a pan, we need the following ingredients: potatoes (it is better to take varieties that do not boil soft), shallots or an ordinary large onion, garlic 5-6 cloves, bay leaf, salt, pepper, pork fat (lard) or fry 150 g of fat. If you do not want to cook with pork fat, you can cook with vegetable oil (100 ml), which is on hand.
Cut the peeled onion into large pieces. Peel the garlic and crush with a knife.
Melt pork fat in a frying pan, throw in onion, garlic, bay leaf, black pepper.
Cut potatoes into long slices.
Fry onion and garlic until brown. We take out completely the whole onion, garlic, bay leaf. We leave only fragrant pork fat in the pan.

How to cook
It is better to take a young, not very large potato for frying in a rustic way - this is the easiest to cook. Old potatoes will also work, but they must be completely peeled before cooking. Young potatoes are quite simply thoroughly washed, preferably using a stiff brush. We cut off spoiled places, if any.
After the prepared potatoes, cut into slices: medium-sized tubers can be cut into 4 parts, larger potatoes - into 6. The main thing is that the slices come out about the same size.
Then there are two options: immediately deep-fry the potatoes or pre-boil them a little, and then fry them in a much smaller amount of oil. Since the potatoes are too oily in the first case, I suggest using the second one. To do this, put the prepared potato wedges in a saucepan. Salt using about 3/4 of the suggested amount of salt.
Pour the potatoes with boiling water and send the saucepan to the stove. We close it with a lid and let the potatoes boil for about 5 minutes. The slices will still be raw and hard, but when cooked they will give some of the starch to the water, as a result of which the potatoes will no longer stick together during frying. Plus, the potatoes will fry much faster.
After the water is completely drained, the potato wedges are thrown back on a sieve. Shake off the water well, let the slices dry. To do this, you can simply spread them out on the work surface in one layer - the water from the hot slices evaporates the remaining moisture in just a couple of minutes. Or you can dry the slices with a paper towel.
Frying. We heat the vegetable oil straight to the smoke and load the potatoes into the pan so that it lies in one layer, albeit dense.
Roast potatoes at open lid turning it over as little as possible. Those. you see that the slices are browned on the bottom, turn over using a spatula. Previously, you don’t need to touch the potatoes, because there is always a risk of damaging neat slices. Ideally, you should get browned potatoes on all sides. Average frying time (per specified portion): 10-15 minutes.
In the meantime, the potatoes are fried, prepare him a fragrant dressing from a mixture of spices. I used: 0.5 tsp. paprika, ready-made seasoning for potato dishes and garlic powder; 0.25 tsp turmeric; 1 tsp herbes de provence and the remaining salt. You can add your favorite seasonings and spices to taste. The only point: I would not advise using fresh garlic in large quantities, since its bright, somewhat sharp aroma and taste will clog the aroma of spices. For my taste, garlic powder is perfect here.
We get rid of excess oil from the finished potato slices (drain or dry the slices with a paper towel) and sprinkle with a mixture of spices. Shake the potatoes so that the seasonings evenly cover each slice.
